Well after yesterdays rather large blowout that took all night to recover from we are now back to our normal routine. Today’s breakfast treat was cereal with an apple topping – nice! After the usual elevenses came this rather tasty lunch:
What you’re feasting your eyes on (apologies for the quality of my photography) is wholemeal toast from a small loaf, spread with humus, topped with sliced olives and grated carrot. In addition, the usual side salad of leaves, tomato, beetroot plus a teaspoon of sunflower and pumpkin seeds, with a small amount of dressing.
This is wholemeal penne pasta with a Quorn mince sauce consisting of onion, garlic, tomatoes, carrots, broccoli, capers and olives, there is also a smidgen of grated Parmesan cheese on top but it had melted by the time I had taken the photo! The important bit is that this consists of lots of sauce but only 2 ounces or 75 grams of pasta. We always finish with half an orange or a tangerine plus a small square of hard cheese to neutralise the acid on my teeth (apparently). It was really tasty even if it looks a bit splat-like – ‘Petula’ did suggest that I shouldn’t post this as it looked rather like the dogs dinner!
